Blackberry Peach Oat Bran Muffins with Chia + Flax vegan & gluten free

Have you see the movie Inside Out yet? Tony and I noticed it Saturday night time and absolutely loved it. I must say I was really impressed with the storyline; the move was a little bit sad (to get a kid’s film) but I would still recommend it inside a heartbeat. I laughed, cried, and was under no circumstances bored.
Anyway what’s on your agenda this week? Me: I’m simply getting back again to Chicago after hanging out in Alabama and am feeling just a little overwhelmed. Life gets that way sometimes, specifically with a move on the horizon and a few big blog tasks. I apologize easily haven’t gotten back to you via email. My inbox is normally overflowing and it makes me anxiety like no additional. Please understand that I’m slowly operating my method through it.
In times like these, it’s best to be prepared with both a large to-do list plus some make ahead snacks + meals. Positive thing I have a giant batch of these muffins sitting in my freezer.
My mother got me addicted to bran muffins a few years back. Every couple of months I embark on a bran binge and make muffins nonstop with all the best seasonal flavors. Remember my banana and pumpkin proteins versions? If you don’t, you better can get on it. These muffins simply are actually my most recent creation using a seasonal twist: peaches and blackberries.
Wouldn’t you agree that blackberries continue to be perhaps one of the most underrated berries available? That changes, starting NOW. I’m convinced you’re going to love the addicting peach-blackberry combo.
Oh as well as the chai spices! I cannot forget to mention them. I really wanted to contact these Chai-Spiced Oat Bran Muffins but then I added BOTH blackberries & peaches. Even so, please get on the chai train with me because the taste is undeniably EPIC in these muffs. I swear you don’t need any special, simply just a few good spices to make them taste a hint such as a warm chai tea. I’m in love and I think you’ll be too. If you’re not a lover of chai, simply skip all the spices and stick with the cinnamon.
How to serve: Personally, i love taking in these cold, direct from the refrigerator with a bit of peanut butter along with a tall glass of almond dairy. They’re also ideal when warmed up; I might end up being biased but I really do they taste a bit like a peach cobbler.

Prep period:
15 mins
Cook time:
15 mins
Total period:
30 mins
2 tablespoons chia seeds
1 teaspoon pure vanilla extract
1/2 cup unsweetened apple sauce
1 1/2 tablespoons melted coconut oil (essential olive oil also works)
1 1/4 cups oat flour (can also make use of white whole wheat otherwise GF)
3/4 cup oat bran
2/3 cup flaxseed meal
1 cup blackberries, trim in half if they’re large
OPTIONAL: 1/2 cup cut walnuts or pecans
Preheat oven to 350 degrees F. Series 12 cup muffin pan with muffins liners and aerosol the inside from the liners with nonstick cooking spray. This is to guarantee the muffins do not stay! Trust me upon this one.
In a big dish, add maple syrup, chia seeds, almond milk, vanilla, applesauce and coconut oil; stir to combine and let sit for a minimum of 5-10 minutes to permit the chia seeds to soak and increase a bit.
In another medium dish, add oat flour, oat bran, flaxseed food, salt, baking powder, baking soda pop and spices. Next add the moist ingredients to the dry ingredients and combine with a solid wood spoon until simply combined. Gently fold in diced peaches and blackberries. Next fold in walnuts, if preferred.
Consistently divide batter among prepared muffin liners, smoothing out the tops if required. Bake for 17-22 a few minutes or until toothpick happens clean. Allow muffins to great in pan for 5 minutes, then transfer to some wire rack to awesome totally. Makes 12 muffins.
Nutrition does not include walnuts/pecans because they are optional. I do highly recommend them though because they add a good little crunch!

beautiful photos! These looks amazing. I am digging the peach/berry combo so much.
I actually saw Inside Out too and loved it. I think it is therefore important to show kids the vocabulary of feelings and emotions. Like a college psychologist I used to be so happy to discover this
Bran muffins will be the best and adding summer season fruit is a genius idea. They look amazing!
And I know, you might be crazy busy! I’ve been following your moves and randomness on Snapchat over the past couple of weeks. You might be freakin’ amusing! That story about the tea tree oil exploding within your suitcase? Aw man, Personally i think for ya.
