Blackberry Peach Oat Bran Muffins with Chia + Flax vegan & gluten free

Have you see the movie Inside Out yet? Tony and I noticed it Saturday night time and absolutely loved it. I must say I was really impressed with the storyline; the move was a little bit sad (to get a kid’s film) but I would still recommend it inside a heartbeat. I laughed, cried, and was under no circumstances bored.
Anyway what’s on your agenda this week? Me: I’m simply getting back again to Chicago after hanging out in Alabama and am feeling just a little overwhelmed. I swear you don’t need any special, simply just a few good spices to make them taste a hint such as a warm chai tea. I’m in love and I think you’ll be too. If you’re not a lover of chai, simply skip all the spices and stick with the cinnamon.
How to serve: Personally, i love taking in these cold, direct from the refrigerator with a bit of peanut butter along with a tall glass of almond dairy. They’re also ideal when warmed up; I might end up being biased but I really do they taste a bit like a peach cobbler.

Ingredients
2 tablespoons chia seeds
1 teaspoon pure vanilla extract

Nutrition does not include walnuts/pecans because they are optional. I do highly recommend them though because they add a good little crunch!
