I just got back from a vacation to Miami and NEW YORK where I ate copious amounts of meals and baked way too many cookies for Tony.

My friend (and fellow blogger) Maegan and I ate nearly every sweet treat we could find in Miami; from coconut cake shakes (OMG) and coconut pecan chocolates chip cookies to crunchy brownie brittle and 2AM insomnia cookies. Hey, you only live once and you better still do it if you’re in Miami!
Each time I attend a food conference or travel generally, I am aware I’m going to be eating way too much so I pack my workout DVDs. This time around I made a decision to bring my dumbbells. FYI: TSA doesn’t like if you bring dumbbells onto planes because they are considered ‘golf club like’. Oops. Sometimes you gotta perform everything you gotta do though, right?
I’m never embarrassed to whip out my weights and take a work out break when everybody else has gone out and about. I know what’s important to me and my well-being. I also pack bento lunchtime boxes for the plane when I’m journeying; this helps me to make sure I’m eating healthy because it can be difficult to acquire decent airport meals.
Speaking of meals and traveling, my next adventure is to New Mexico over Memorial Time weekend. I’ll be visiting my adorable Grandparents who most likely love food more than me. Gloria (my grandma) makes about four homemade scuff recipes each day. Seriously perhaps you have produced her buttermilk waffles yet? Incredible.
I’m actually just a little terrified as I have a feeling she is going to to become 10x more eager to bake beside me. We’re sort of two peas inside a pod in that way though; always attempting to come up with new ideas. I suppose it’s a good thing that I’ve already packed many Jillian Michael’s Dvd videos and undoubtedly, there’s ZUMBA. She’s kind of obsessed with it.
Since my Grandpa loves banana bread a lot, I’m hoping to bake him a batch of the healthy bars. I totally can’t get more than enough of them. Keep in mind my banana bread oat bars that I made a few months ago? These are virtually identical, except with extra chocolates love.
I made around five batches to make sure that they’re perfect. I want to remember that these a little bit over the verge of the brownie and a chocolate cake bar. They’re super chewy and also have a wonderful texture, but aren’t necessarily fudgy and rich. I’m not really kidding, there were a few evenings where I ate around four for dinner paired with a huge cup of Blue Diamond chocolate almond milk (my fav).
Viewers nearly anyone will be able to enjoy these bars, also my grandpa who loves his sweets. They’re vegan, gluten free, low calorie, but still nutritional thick and full of healthy carbs. And may you believe that one bar is only around 93 calorie consumption? Pack them for a 3pm sweet treat or provide them with to your children to chew on. Or just eat all of them yourself (suggested).
I like using maple syrup in this recipe, but honey will leave you using a tiny sweeter bar. To make them your own try folding in coconut, walnuts or pecans, a swirl of peanut butter, or a particular artisan delicious chocolate. I’ve seen you get creative with my meals before, and I expect nothing less with one of these.

1/2 teaspoon light weight aluminum free cooking powder
1/2 teaspoon cooking soda
1 teaspoon 100 % pure vanilla extract (gluten free of charge, if desired)
1/4 glass honey (agave nectar or maple syrup if vegan)
1/3 cup vegan chocolate chips
For chocolate drizzle:
Preheat oven to 350 levels F. Spray 9×9 inch baking pan with non-stick cooking spray.
To create oat flour: Place oats into blender or food processor and blend for 1-2 minutes until oatmeal resembles flour. You may need to end blender and stir oats a couple of times to ensure that all oats have already been blended. Transfer oat flour medium dish; whisk in cocoa powder, baking powder, and baking soda pop; set aside.
Place bananas, vanilla, and honey into blender; blend 1-2 a few minutes or until clean and creamy. Add to oat flour mixture and blend until just combined.
Gently fold in 1/3 cup of chocolate chips. Pour batter into prepared pan, spreading equally with plastic spatula. Bake for a quarter-hour or until blade inserted into middle arrives clean or with just a couple crumbs attached. Cool 10-15 minutes on wire rack.
Prepare drizzle by adding 2 tablespoons of chocolates chips to a microwave safe dish. Microwave on high in 30 mere seconds intervals until chocolates is melted; mix well to mix then drizzle outrageous of bars. Cut pubs into 16 squares and revel in!
Bars can be frozen. Basically bake, cool, lower; store in ziploc handbag. Reheat separately for 30 secs in microwave.

I actually made these and they’re so great, go-to treat for me!
I’ve got them in the refrigerator for probably over a month and they still flavor as good as when they had been first made.
I myself usually do not even know how they are within the freezer for such a long time, I am simply surrounded by a lot of sweets I believe I forgot approximately them! :
