Hello you lovely souls. I’m seated in an attractive, cozy ruler bed writing to you from Hilton Head Health , an exercise and wellness vacation resort in Hilton Mind, SC. This past week continues to be so refreshing for me personally in more methods than I could fathom to write about. Sometimes you just can’t placed into words everything you feel when your center is continuous and content. Personally i think beyond lucky to become invited here; the inspiration in wellness classes, new friends and being truly a little more susceptible has still left me having a realization that I have to let go of my concerns of judgement with regards to blogging and getting more personal.

My goodness is it possible to believe AK has been cooking for a little more than 3 years? I’ve created here about my entire life experiences, career adjustments, moving, human relationships, friendships and my ever growing obsession with Zac Efron.
What I haven’t included is my true and constant battle with food; certainly it’s the like of my life (questionable because of Tony). I don’t desire this post to become overweight, but do need you to learn that this blog page will change and grow, just like any human being does. And as any relationship goes, I am hoping we’re in this together; that you’ll still visit AK to make my recipes simply because they certainly are not going aside. But more than enough serious business. Let’s get onto the treats I baked for you personally today! Flourless Pumpkin Almond Butter Pubs. I know, right? With dark chocolate and perhaps some coconut if you elegant it (you SO fancyyy).
I’m so happy that these pubs cooked up so delightfully and full of pumpkin flavor. I had been afraid the almond butter would come through too much, but it turns out that these fulfill a pumpkin craving like no other.
What I’m especially excited about is the wonderful nutrition in these bars. Plenty of vitamin supplements plus antioxidants (from chocolates) taking place. They’re also gluten free of charge, low carb, dairy products free, paleo and grain free of charge. I’m fairly specific you could very easily veganize them by adding a flax egg (1 T floor flax seed + 3 tablespoons water). I really like enjoying mine in the afternoon with a big sit down elsewhere.
To serve them like a dessert, I suggest topping them off with a little coconut whipped cream or homemade almond butter smeared outrageous with a sprinkle of ocean salt. Just believe me on this one men; nice and salty is always the answer.

Ingredients
1/2 cup pumpkin puree
1 egg
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your preferred dark chocolate bar (a minimum of 70% cocoa), coarsely chopped
Instructions
Preheat oven to 350 levels F. Spray an 8×8 in . baking pan with nonstick food preparation spray.
In a large bowl, whisk collectively all ingredients except coconut and chocolates. Once ingredients are well combined, fold in 1/4 cup of the coconut flakes and every one of the dark chocolate.
Pour into prepared pan and sprinkle all of those other coconut flakes on top. Bake for 20 moments or until slightly golden brown in the edges. Place pan on cable rack to great. Once cool, cut into 16 squares. Enjoy!

TO MAKE VEGAN: Try using a flax egg to displace the egg.
If you omit the coconut and chocolates, each bar (based on 16 pubs) is around 67 calorie consumption.
If you just omit the coconut, the bars is a little under 100 calories.
Rather than almond butter, you should use another natural nut butter of your choice. I don’t recommend sunflower seed butter. Peanut butter will be delicious!
