Pepper Jack Stuffed Turkey Zucchini Meat Loaf with Awesome Sauce

HEALTHY LOW CARBOHYDRATE Turkey Zucchini Meat Loaf filled with pepper jack and topped with delicious sauce EVER!
Zucchini, zucchini, ZUCCHINI. It’s overtaking my life. I’m not sure I mind so much, but I could tell you that I’m obtaining fed up with shredding the zucchini. I have some more to consume but from then on I don’t believe you will see another zucchini recipe from me in quite sometime. My right arm in physical form hurts from zucchini shredding symptoms. Yes, it’s officially a symptoms (in the AK book in any case).
I realize I am doing various baked products with zucchini so this time I needed to bring you something just a little savory such as this turkey zucchini meatloaf. I chose that adding some zucchini to some turkey meatloaf wouldn’t normally only be considered a great way to obtain my veggies in, but also to add moisture (since I use lean turkey).
So when if that wasn’t plenty of, I just had to throw in just a little pepper jack in the centre because I’m about just a little kick. It’s funny, I actually don’t consider pepper jack to become spicy; my Mom used to provide jalapenos at just about any meal therefore i think my taste buds have modified to the point where I can pour oodles of Sriracha on my meals without any impact.
Not sure if that’s a good thing or not?
So, for all of you mamas on the market or meal preppers this is an excellent healthy recipe and makes terrific leftovers. I had been chowing down onto it for a couple days with a nice sweet potato privately.
The awesome sauce is well… AWESOME. It’s nice but spicy and really adds a ton of flavor to the meatloaf. (It’s originally from my lentil loaf recipe)
And please don’t put that Heinz corn syrup stuff on your own meatloaf. Yes I simply stated that; don’t hate me!
I’m a HUGE fan of ketchup (such as I place that sht on everything and We don’t buy Heinz), however you can easily make delicious EASY homemade amazing meatloaf sauce yourself. Rely upon the power of the recipe.

Ingredients
1 cup finely diced white onion
1 cup shredded zucchini, squeezed of unwanted moisture with a paper towel
2 cloves garlic clove, minced
1 egg, slightly beaten
1/2 cup italian style panko breadcrumbs (might use GF breadcrumbs)
2 tablespoons organic ketchup
1 teaspoon dijon mustard
1/2 teaspoon ocean salt
For the topping:
1/2 tablespoon honey
1 tablespoon mustard
dash of hot sauce
Instructions
Preheat oven to 375 levels F. Line large baking sheet with foil and spray with nonstick cooking spray.
In a large dish combine turkey, onion, zucchini, garlic, egg, breadcrumbs, spices, mustard and salt and pepper. Make use of the hands or a large spoon to mix until well combined. I find that it’s much easier to mix the ingredients if you use your hands.
Place half of meats mixture about foil-lined pan and shape right into a 10×4 inches rectangle. Top with pepper jack equally, leaving about an 1/2 in . of room over the sides. Top with the remaining meats blend, enclosing the mozzarella cheese completely and closing the side together.

Bake meatloaf for 45 mins to 1 1 hour or until meats thermometer reads 160 degrees F. Best with staying sauce and allow to great for ten minutes before reducing into 6 pieces.
I made this last night for my hubby, who was extremely skeptical of this recipe and stated can’t we only need regular meatloaf?”. I took it from the oven and before I could even snap an image he was digging in! He ate 3 huge slices and wants me to create it again next week!
